This may well be my last post from my trips to Iran and it is a problematic one because even though I took the clip above, I don’t remember what the filling is nor what the bread is called. I don’t even remember what it tasted like and you can see from the not so flattering picture of me (taken by my lovely friend Alimo who showed me around on my first trip) that I did taste it. Perhaps Alimo will come to my rescue or one of you will and tell me what that filling is, also the name of the bread. My feeling is that the filling was either ground sesame or walnuts but I may be wrong. Looks delicious though, and yet again you can’t but admire the dexterity of the baker. I should have waited to film him stamp the bread with the beautiful implement which you can spot to his right. I will definitely buy one when I return. I will also film the whole sequence and take proper notes!
The irony is that I was holding a note pad. All I have to do now is try to find it, and hopefully find notes about the bread inside it!
Here is a full shot of the bakery with other breads which I assume are also sweet. Any comments from those who know what they are are welcome.

This happens to me all the time. Either I don’t find my notes or don’t understand my writing. If I don’t write it just after the fact, it is gone forever in the labyrinth of my head!!

Dear Anissa, What wonderful mouthwatering posts. I need to taste some of the delights you are describing, in particular bread and rice. Could you recommend any Iranian restaurant in London?

unfortunately, we are not spoiled for choice. Sufi in acton is not bad. Mohsen is also OK and galleria but to be honest none are really great. you will have to come to one of my supper club nights ๐

Anissa, they look very much like Azeri churek. I have a collection of the USSR era books filled with recipes of different breads. There are several churek recipes, and I will look through to see if there is anything similar. And speaking of Soviet breadmaking, I have been hounding the Library of Congress for various baking manuals that were used in the Soviet bread production. The oldest one contain recipes developed as early as 1938–basically, an adaptation of the Tsarist era methods. The later ones already rely on new technologies and on new understanding of producing cultures, etc.
These breads also made me think of komaj, but it is usually filled with dates and walnuts.

My Iranian friend here in Port Elizabeth South Africa says that if you can tell him where you took the photos (which town/city), he might be able to tell you what the filling of this bread is.

I’ve never seen any bread or pastry that looks quite like this. I just went through my Azeri and Uzbek cookbooks and learned nothing. They may be a specialty of professional bakers and don’t show up in cookbooks.

Hi Anissa,
These are called “koloocheh Foomani” , which translates to “sweet breads from Fooman”. Fooman is a city in Northern Iran. I did a google search and came up with this link. The text is in Persian. Hope this helps ๐

This is armenian sweet bread. It’s called gata. You will have a lot of Armenian bakery’s in Iran.

Hi Anissa,
this is an iranian sweet called “kooloocheh”. It is an iranian cookie version of the Armenian “gata”. It is very delicious. If you like this, I am sure you will like “naan ghandi” which is like an iranian gingerbread.
